Plum Ginger Chicken Wild Rice Salad

    1 pkg (4-6 oz) long grain & wild rice blend
    2 cups cubed, cooked chicken breast
    1/2 cup sliced green onions
    4 plums, sliced
    2 tbsp vegetable oil
    2 tbsp lemon juice
    1 tbsp soy sauce
    1/2 tsp ground ginger

Prepare rice blend as directed; cool to room temperature. In large bowl, combine rice, chicken, green onions and plums. In small bowl, combine oil, lemon juice, soy sauce and ginger; pour over rice mixture and toss lightly. Chill until served.
