Wild Rice Cheese Chowder

    4 tbsp butter
    1/2 cup flour
    2 cans (14-1/2 oz each) Swanson Chicken Broth
    1/2 cup diced onion
    1/2 green pepper, diced
    1-1/2 cups Green Giant Frozen Mixed Vegetables (from 14 oz pkg)
    1/2 tsp ground white pepper
    1/2 tsp Greek seasoning
    2 cups Fancy Brand Shredded Mild Cheddar Cheese
    1-1/2 cups shredded Fancy Brand Monterey Jack Cheese
    3 cups whole milk
    1 cup beer or water
    3 cups cooked wild rice
    fresh parsley, minced (optional garnish)

In large saucepan, melt butter. Add flour, stirring until bubbly; gradually stir in broth. Add vegetables and seasonings; simmer 30 minutes. Gradually add cheeses, stirring constantly. Stir in milk, beer (or water) and wild rice; heat through - do not boil. Garnish.
