Wild Rice & Beef Quesadillas

    2 tsp Dijon mustard
    1 cup cooked wild rice
    1 1/3 cup shredded Fancy Brand® Monterey Jack Hot Pepper Cheese
    1/2 cup minced fresh cilantro
    8 (6 in) flour tortillas
    1 cup thinly sliced sweet onion
    1 cup thinly sliced green bell pepper
    8 thin slices deli roast beef
    prepared salsa, topping
    fresh cilantro leaves, topping

In medium bowl, combine mustard, wild rice, cheese and cilantro; spread on 4 tortillas. Layer each with onion, green pepper and beef; top with another tortilla. Preheat skillet over medium heat; spray with nonstick cooking spray. Fry quesadillas 2-3 minutes. Spray top of tortillas with cooking spray; turn gently and cook until cheese melts. Cut into wedges and top with salsa and cilantro.

Oven directions: Place prepared quesadillas on greased cookie sheet; spray tops with cooking spray and bake in pre-heated 375°F oven for 5 minutes, until golden.
