Zesty Wild Rice Meatloaf

    1 lb 85% lean minced beef
    1 cup cooked wild rice
    1 egg
    1/4 cup chopped green pepper
    1/4 cup finely chopped onion
    1-2 tbsp prepared creamy horseradish
    2 tbsp ketchup
    1/2 tsp salt

Heat oven to 350°F. In medium bowl, combine all ingredients; mix well. Shape into loaf; place in 7-1/2x4-inch baking dish (empty space should surround all four sides of loaf). Bake 50-60 minutes or until meatloaf is firm.
