Sunshine Seafood Salad

    YIELD: 24 portions
    PORTION: 6 oz

    16 cups cooked wild rice
    3 lbs imitation crab
    8 oz sliced green onions

    Dressing Ingredients
    12 oz olive oil or vegetable oil
    4 oz lemon juice
    1/2 cup chopped fresh parsley
    2 tbsp sugar
    2 tbsp grated lemon peel
    2 tbsp dijon mustard
    1 tbsp lemon pepper

In large bowl, combine all salad ingredients; toss. Set aside.

In separate bowl, whisk together all dressing ingredients. Pour over salad; toss to coat.
