Fruity Wild Rice Chicken Spinach Salad

2015 wild rice recipe contest finalist

    4 cups cooked wild rice
    2 cups chopped fresh spinach
    4 strips bacon, cooked and crumbled
    2 tbsp each minced: fresh basil and fresh mint
    1 cup quartered strawberries
    1/2 cup mandarin oranges
    1 cup peeled and cubed ripe avocado
    2 breasts Gold’n Plump® Seasoned Boneless Skinless Chicken Breast Fillets, Lemon Pepper, cooked and cubed
    1/3 cup Sargento® Artisan Blends® Shredded Swiss Cheese

    Dressing (whisk together; chill):
    1/3 cup each: canola oil, orange juice, and raspberry vinegar

In large bowl, combine wild rice, spinach, bacon, basil, and mint. Top
with remaining ingredients. Add dressing; gently toss.

6 servings.
