Toasted Wild Rice Fruity Sidedish

    3 tbsp butter
    4 cups cooked wild rice
    1 cup sliced fresh mushrooms
    3/4 cup sliced almonds
    1 can (16 oz) whole cranberries
    1/2 cup dried fruit bits, variety of choice
    1 1/2 tsp oregano
    1 1/2 tsp thyme
    2 cups shredded Fancy Brand® Provolone Cheese

In large skillet, melt butter, add wild rice; stir–fry to toast. Stir in mushrooms and almonds; cook until browned. Add cranberries, dried fruit, oregano and thyme. Heat through; stir in cheese.

8 servings.
