Wild Thai Stir Fry

    1/3 cup canola oil
    1 lb beef tenderloin, thinly sliced
    1 tbsp curry powder
    1 cup sliced onion
    1 red pepper, sliced
    1 cup fresh baby carrots
    1 can (14 oz) coconut milk
    3 tbsp chopped fresh basil
    4 cups cooked wild rice

In large skillet, heat oil; stir fry beef. Stir in curry powder. Stir in onions, peppers and carrots; cook 5 minutes or until vegetables are tender crisp. Stir in milk and basil; simmer 5 minutes. Serve over wild rice.

6-8 servings
