Seafood Farmstead Frittata

    6 slices bacon, cut in 1-inch pieces
    1/2 cup chopped onion
    1/2 cup chopped red pepper
    1 large clove garlic, minced
    6 large eggs
    1/2 cup water
    2 tbsp chopped fresh oregano
    1/2 tsp salt
    1/2 tsp pepper
    1 cup colby-jack shredded cheese, divided
    1 pkg (9 oz) Green Giant® Simply Steam® Broccoli Cuts,
    prepared as directed on pkg, drained
    1 cup Wee Willy's® Chunky Salsa, divided
    3 cups cooked wild rice
    1 pkg (8 oz) Louis Kemp® Crab Delights® (any style), shredded

In 10-inch skillet, saute bacon, onion, red pepper and garlic; drain
and set aside. In a large bowl, whisk eggs, water, oregano, salt
and pepper. Stir in 1/2 cup cheese, bacon mixture, broccoli, 1/2
cup salsa, wild rice and crab. Coat skillet with cooking spray; pour
mixture into skillet. Cook over low to medium heat 10-12 minutes,
until eggs are almost set. Top with remaining cheese. Remove
from heat; cover and let stand until eggs are set and cheese melts.
Cut into wedges; top with remaining salsa. 6 servings.
