Minnesota Gourmet Burgers

YIELD: Approximately 15 pounds

Portions: 55-60, 4-ounce burgers

Minnesota Wild Rice
Hot Water

2 quarts
Cook wild rice using one of the following methods. Drain: set aside. (Note: cooked wild rice will keep 1 week in cooler or 6 months in freezer.)

Range: Combine hot water and wild rice in heavy 3 quart pot, cover and bring to a boil. Reduce heat and simmer 45-55 minutes or until grains start to open. Add water if necessary.

Steamer: Combine hot water and wild rice in 12"x9-1/2" shallow steamer pan. Place pan, uncovered, in steamer. Steam 40-50 minutes or until grains are open. Cooking time may vary with type of steamer.

Oven: Preheat oven to 400°F. Combine hot water and wild rice in a 12" x9-1/2 shallow steamer pan. Cover and place in oven. Bake 40-50 minutes or until grains are open.

If preparing burgers immediately, wild rice may be cooled by rinsing with cold water and draining.
80% Lean Ground Beef
Salt

1/2 ounce
1. Place ground beef in mixer.
2. With mixer on, add cooked, chilled wild rice; add salt.
3. Mix 2 minutes or until wild rice is uniformly distributed throughout the mixture.
4. Form mixture into 4-ounce burger.

Make mixture into: burgers; meatloaf; meatballs.
