Northwoods Buttermilk Cake
- 2 cups well cooked wild rice
1 cup whole wheat flour
2 cups all purpose flour
2 tsp baking soda
1/2 tsp salt
1/2 tsp nutmeg
1 tsp cinnamon
1/2 cup extra light margarine
1 cup packed brown sugar
1 tsp vanilla
5 egg whites
2/3 cup applesauce
1 cup buttermilk
Preheat oven to 350°F. Grease and lightly flour 9x13" pan. In medium bowl stir together flours, baking soda, salt, nutmeg and cinnamon. In large mixing bowl, beat margarine with electric mixer on medium speed for 30 seconds. Add brown sugar and vanilla; beat till fluffy. Add egg whites and beat well. Add applesauce, blending well. Add dry ingredients and buttermilk alternately to mixture, blending well. Stir in wild rice. Turn into prepared pan. Bake 45-50 minutes or till done. Do not over bake. Cool. Frost with a favorite sour cream frosting or top each serving with whipped cream
