Wild Rice Applesauce Bars
- 2 cups well-cooked wild rice
1 cup buttermilk, divided
1 cup applesauce
1/4 cup canola oil
3/4 cup shortening
1 cup firmly packed brown sugar
3 eggs
2 tsp vanilla
2 1/2 cups all purpose flour
1 tsp baking soda
1 tsp salt
1 tsp cinnamon
1 cup chopped nuts, optional
Frosting (whisk together):
1/2 cup butter or margarine, softened
4 cups powdered sugar
1/4 cup cold strong coffee
2 tsp vanilla
Preheat oven to 350°F. Grease bottom of 15x10x1-inch baking pan. In medium bowl, combine wild rice, 1/2 cup buttermilk and applesauce; set aside. In large bowl, combine shortening, brown sugar, eggs and vanilla; beat at high speed 5 minutes or until smooth and creamy. Add remaining 1/2 cup buttermilk; beat at low speed until well-blended. Add flour, baking soda, salt and cinnamon; beat at low speed until well blended. Stir in wild rice mixture and nuts. Spread in greased pan. Bake 20-25 minutes or until toothpick in center comes out clean. Cool completely. In medium bowl, combine all frosting ingredients; beat at high speed until smooth and creamy. Frost cooled bars.
