White Turkey Wild Rice Chili

    1 tbsp canola oil
    1 medium onion, chopped
    1 garlic clove, minced
    1 1/4 lbs turkey breast slices, cut in 1/2" pieces
    2 cups cooked wild rice
    1 can (15 oz) great northern white beans, drained
    1 can (11 oz) white corn
    2 cans (4 oz) diced green chilies
    1 can (15 1/2 oz) low sodium chicken broth
    1 tsp ground cumin
    Hot pepper sauce, optional
    4 oz low fat Monterey Jack Cheese, shredded parsley (optional)

Heat oil in large pan over medium heat; add onion and garlic. Cook until tender. Add turkey, wild rice, beans, corn, chilies, broth and cumin. Cover and simmer over low heat 30 minutes or until turkey is tender. To serve, stir hot pepper sauce into chili to taste. Serve with shredded cheese. Garnish with parsley.
