Wild Rice Fruited Sauté

- 1 cup cooked wild rice
½ cup sweet corn
1 tbsp each, diced: red bell pepper, green bell pepper, yellow bell pepper
6 snow peas, sliced
2 tbsp sliced scallions
2 tbsp pepitas, toasted
1 tbsp dried cranberries
1 tbsp dried blueberries
2 tbsp butter
1 tbsp water
salt and ground black pepper, to taste
In a sauté pan over medium-high heat, melt the butter and add the onion. Cook until softened. Increase heat to high and add the peppers and corn. Toss well for about a minute. Add the peas and toss well for 30 seconds. Add the dried berries and the wild rice and toss in well for 30 second. Add the pepitas, salt and pepper and toss well 30 seconds. Add the water and toss well. Stir in the scallions and serve.
