Stir-Fried Wild Rice

    2 cups cooked wild rice (2/3 cup uncooked)
    2 tbsp vegetable oil
    1 lb pork tenderloin, sliced 1/4 inch thick
    1 medium onion, sliced
    2 carrots, sliced 1/8 inch thick
    1 bunch broccoli, florets removed and stalks sliced 1/8 inch thick
    1 tsp cornstarch
    1/2 tsp ground ginger
    2 tbsp low-sodium soy sauce

In heavy skillet, heat oil. Add pork and stir-fry over high heat 2 minutes. Add onion, carrots and broccoli slices. Stir-fry 5 minutes. Add broccoli florets and wild rice. Blend cornstarch and ginger with soy sauce; add to skillet. Cook and stir 1 minute or until chickened.
