Nutted Wild Rice Salad

    Rice Layer:
    4 cups cooked wild rice
    1 cup pecan halves
    1 cup golden raisins
    Graded rind of 1 orange
    juice of 1 orange
    4 green onions, sliced
    1/4 cup canola oil
    1 1/2 tsp salt

    In large bowl, combine all ingredients; gently stirring until blended. Let wild rice mixture set at room temperature for one hour to allow flavors to blend. Meanwhile, prepare turkey layer.

    Turkey Layer:
    1 (1.5-2 lb) Jennie-O® Lemon-Garlic Turkey Breast Tenderloin, cooked and cubed
    1/2 cup mayonnaise

    In large bowl, stir turkey and mayonnaise together; set aside.

    Garnish:
    1 fresh orange, thinly sliced (unpeeled)
    1 small bunch of green grapes

To assemble: place 1/2 of wild rice mixture in 3-qt glass bowl. Layer with half of the turkey. Repeat. Garnish with orange slices and grapes.
