Wild Spinach-Stuffed Meatloaf

    1-1/2 lbs lean ground beef
    3/4 cup soft breadcrumbs
    1 egg
    2 cups cooked wild rice
    1/2 tsp salt
    1/2 tsp pepper
    3 tbsp ketchup
    1/4 cup Fancy Brand® Shredded Mozzarella Cheese

    Spinach Stuffing (mix together):
    1 box (9 oz) Green Giant® Frozen Spinach, thawed and drained
    3/4 cup Fancy Brand® shredded Mozzarella Cheese
    2 tbsp grated Parmesan cheese
    1 tsp Italian seasoning
    1/4 tsp garlic powder

Preheat oven to 350°F. In large bowl, mix first six ingredients; place on wax paper and pat into 14x10-inch rectangle. Spread with stuffing, leaving 3/4-inch boarder at edges. Starting at short end, roll jellyroll fashion; press ends to seal. Place seam side down in open roasting pan; bake 1 hour. Spread with ketchup and sprinkle with cheese; bake 15 minutes.
