Wild Rice Waldorf

    YIELD: 24 portions
    PORTION: 5 oz

    8 cups red apples, unpeeled, diced
    1/4 cup lemon juice
    1/2 cup brown sugar
    4 cups thinly sliced celery
    8 cups cooked wild rice
    3 cups mayonnaise

In large bowl, toss apples with lemon juice and brown sugar. Stir in celery and wild rice. Add mayonnaise and toss.
