Rennemo's Favorite Wild Rice Salad

    2/3 cup sliced almonds, toasted
    2/3 cup sunflower nuts, toasted
    2 packages (3 oz each) chicken-flavored ramen noodles, crushed and toasted
    1 16 oz bag coleslaw mix
    4 cups cooked wild rice
    1/2 cup bacon bits
    4 green onions, chopped

    Dressing (whisk together; chill):
    3/4 cup oil
    3 tbsp sugar
    3 tbsp vinegar
    2 seasoning packets from ramen soup mix

In large bowl combine ingredients. Add dressing; toss.

Ross and Lori Rennemo along with their children, Devin, Cara, Reed, and Conner reside in Kelliher. Ross and his sons farm in the Waskish area. They are not the first Rennemos to farm wild rice, Ross’ father Wally and grandfather Ingvar began farming wild rice in the late 1960's and are considered among the pioneers of cultivated wild rice production in Minnesota.

In 1985, Ross bought into the family wild rice business by purchasing his own acres. Operating as Voyageurs Wild Rice, Inc., Ross' sons Devin and Reed represent the fourth generation of Rennemos farming wild rice.

Ross has worked in conjunction with the University of Minnesota on fertility and variety trials on his farm for the benefit of the wild rice industry.

Ross currently serves on the Minnesota Cultivated Wild Rice Council, a position he has held for many years.
