Wild Rice Confetti Medley Kay Botko, Eden Prairie, MN 2015 wild rice recipe contest finalist1 lb ground beef
1 cup finely chopped sweet onion
1 large each: red pepper and yellow pepper, diced
2 tbsp canola oil
2 cups cooked wild rice
1 pkg (12 oz) applewood smoked bacon, cooked and crumbled
1 box (9 oz) frozen Green Giant® Steamers Sweet Peas
1 can (8 oz) diced water chestnuts, drained
3/4 cup finely chopped parsley, divided
1/4 tsp freshly ground black pepper
1-1/2 tsp salt
1 can (10.5 oz) golden mushroom soup
1/2 cup milk In a large skillet, brown beef, onion, and peppers in oil. Mix in remaining ingredients, except ¼ cup parsley. Heat through until liquid is absorbed. Garnish with remaining parsley. 8 servings.Recipe compliments of the Minnesota Cultivated Wild Rice Council
