Wild Rice Pork & Beef Ramen Soup Jeanne Holt, Mendota Heights, MN 2019 wild rice recipe contest finalist ¾ lb each: pork tenderloin and flank steak, cubed, salt and peppered
1 tbsp canola oil
8 cups reduced sodium chicken broth
1 piece (2½ inches) fresh ginger, quartered lengthwise
zest from small lime
2 tsp fish sauce
¼ tsp crushed red pepper
2½ cups cooked wild rice
1 can (15 oz) whole baby corn, drained, cut into bite-sized pieces
½ cup diced red bell pepper
1 pkg (3 oz) instant ramen noodles, chopped (discard seasoning)
3 tbsp soy sauce
1 tbsp fresh lime juice
3 green onions, sliced
¼ cup chopped cilantro, garnish In large skillet, stir-fry pork and beef in oil; set aside. In large saucepan, combine next 5 ingredients; bring to boil. Cover; simmer 10 minutes. Remove ginger.
