Wild Rice Stuffed Cabbage Soup Lisa Keys, Kennett Square, PA 2022 wild rice recipe contest finalist 1 lb lean ground beef
1 tsp each: kosher salt and smoked paprika
2 tbsp canola oil
2 cloves garlic, minced
1 shallot, chopped
1 carrot, peeled and grated
3 large Roma tomatoes, seeded and chopped
2 tbsp dark brown sugar
4 cups tomato juice
2 cups water
3 tsp beef soup base
1 tbsp fresh lemon juice
2 cups cooked wild rice
½ small head green cabbage, cored and thinly sliced
½ tsp ground black pepper
2 tbsp chopped flat leaf parsley
sour cream, garnish In large saucepan, stir-fry beef, salt, and paprika in oil. Add garlic, shallot, and carrot; cook 2 minutes. Stir in tomatoes and brown sugar; cook 2 minutes. Stir in tomato juice, water, and soup base; bring to boil. Reduce heat and cover; simmer 15 minutes. Add lemon juice, wild rice, cabbage, and pepper; cook until cabbage is tender. Stir in parsley.
