Thai Chicken & Wild Rice Soup Daniel Carberg, Roxbury, NH 2025 wild rice recipe contest finalist 1 small onion, chopped
1 small red bell pepper, chopped
4 tbsp canola oil
1½ cups chopped cauliflower
2 tbsp red curry paste
1 tsp ground ginger
3 cups chicken broth
2 Just Bare® Boneless, Skinless Chicken Breast Fillets, cooked and cubed
2 cups cooked wild rice
1 can (13.5 oz) coconut milk
1 tbsp salt
sliced green onion, garnish
In large saucepan, sauté onion and bell pepper in oil, 5 minutes. Add cauliflower, curry paste, and ginger; sauté 3 minutes. Add broth; simmer 8 minutes. Add remaining ingredients (except garnish); heat through. Garnish. 6 servingsRecipe compliments of the Minnesota Cultivated Wild Rice Council
