Andouille Fried Wild Rice Skillet Teresa Cardin, Pyatt, AR 2025 wild rice recipe contest finalist 8 oz Andouille sausage, sliced into half moons
2 tbsp canola oil
½ cup each, diced: white onion, green bell pepper, and celery
2 cloves garlic, minced
1¾ tsp Cajun seasoning
3 large eggs, beaten
3½ cups cooked wild rice
2½ tbsp soy sauce
½ tsp ground black pepper
2 tbsp chopped green onion, garnish In large skillet, cook sausage in oil until edges brown; remove sausage, leaving oil in skillet. Add onion, bell pepper, and celery; sauté until softened. Stir in garlic and Cajun seasoning until fragrant. Move vegetables to one side; scramble eggs on other side of skillet. Stir in remaining ingredients (except garnish); heat through.
